The "grip length" of a rivet is supposed to be the thickness of the material it's supposed to be holding, not the length of the rivet body, right?

Grip length IS the thickness of the material it's supposed to be holding, sometimes referred as material thickness. I have seen (and purchased) pop rivets advertised with only a couple of basic dimensions, like 1/8" x "N" . Where N is sometimes the grip length and sometimes the length before riveting.

If buying by those basic dimensions, it is best to see the rivets before buying. Buying pop rivets on line is iffy, unless they really do a good job with detailed specifications.

That looks much like the chart at Aircraft Spruce.

They have 1/8" Cherry N aluminum rivets, BSPS-42, , with ".062-.125" grip range."

I don't know why two separate threads are showing up; I didn't get any errors when I clicked "Submit." Maybe a moderator can merge the threads?

the question your asking is so vague there is not one answer and no way any one can answer it as there are so many different types of pop rivets ,
I would go to hansonrivet.com this is were we buy all our rivets and rivet type fasteners .
they offer a chart that explains all your questions you would have . from the chart you can pick the type and rivet materials you would need .
