Why not use the stock ubj from the miata? If one were to make a ring setup like this and press it in, any reason it wouldnt work??

That is one way to do it but I don’t know anybody who has gone to that much effort. Another option is to use a tie rod that fits the miata upper spindle boss without modification. This saves fab work, time, and cost.

I was thinking more along the lines of being able to stand the shock up a little straighter with the extra room it would allow

Standing the shock up straighter only makes the upper mount for it stick out further from that frame. If that's what you are looking for, then that's OK. The further you vary from the proven methods, the more design work you need to do. I do believe that the pressed in joint like you linked to has been done before. I don't recall if the shock was relocated vertically though.

The UBJ seat brkt could be designed with an offset for more clearance to the coilover at full droop. However, if you intend to just modify the speedway part, any extra clearance would be negligible. The threaded ring ID is much larger than the miata UBJ OD so you’d need to reduce it. The tie rod shank would point to the rear LCAP, not directly inboard toward the coilover so clearance would be about the same.
