In these wonderful open air automobiles there is no need.
All my builds have no directional air flow selection, there is no need.

The foot well is so small in a Seven, that you really do not need a lot of air flow to keep your feet warm. I probably have about 60% directed thru the defrost vent, which helps get "a little" heat in the upper cabin area. Disclaimer: I have half doors and a bikini top and typically only run the heater on the lowest speed. A with fully open cabin it would be more difficult and a different story.

I have 3D printed my heater and defroster vents.
Not the best looking, because I don't have a big enough printer bed, so I had to make it from multiple parts, but it is not a museum piece.
The 7 logo part is just to cover some of the ugliness.
I still have to decide defrost ducts, not sure if I will use one with a T, or two separate ones.

I have also printed a new trim bracket, instead of the original GTI trim, which has to complicated shape. I don't know how to use CAD, just messing with it, but eventually I made all these parts.
It has an inner ring as well. I will saw all three parts together. I don't have a proper stapler.
